Culinary Experiments : Paratha Series , The Healthy Bites - Sattu Bharke Paratha Recipe
SATTU PARATHA
Sattu, with umpteen health benefits and being nutritious, is a staple food in Jharkhand.
Having stayed in Ranchi, for many years - Sattu ka paratha was something which was very popular breakfast dish.
INGREDIENTS:
- Sattu - 1 tablespoon each for the number of rolls from the dough
- 6 Garlic cloves finely chopped
- An inch of finely chopped ginger
- 1.5 - 2 teaspoon of mustard oil
- Pickle and its oil
- 2 teaspoon - Amchur Powder
- Ajwain seeds - 1/2 teaspoon
- Finely chopped chili
- Pinch of asafoetida
RECIPE:
Mix the above said ingredients nicely, and if the mixture is dry you can add little mustard oil or pickle oil to make it little moist.
Now knead using atta, oil, salt and water, and prepare a soft dough. Keep the dough covered for about 15-20 minutes - this will ensure that the dough becomes soft.
Pre-heat the tawa.
Divide the dough into equal balls, and carefully fill it with the stuffing and roll the paratha.While rolling the paratha, be careful - sometimes due to air locked inside, the paratha tears and the stuffing comes out.
Place the paratha on the tawa, flip to check if both sides are equally cooked.
Once done, add oil/ghee till both the sides are golden brown and cooked.
It can be served as breakfast or dinner with pickles/sweet chutney/curd.
