Culinary Experiments : Odia Style Amba Khatta
AMBA KHATTA - KACCHE AAM KI CHUTNEY
In a kadhai - add 2 tablespoon of oil, preferably mustard oil. Once the oil is hot enough - add 1 to 1.5 teaspoon of panchfodan, few curry leaves and lal sukhi mirchi. Toss the ingredients for about 1 minute or less.
Now add jaggery/sugar as per requirement of the sweetness in the chutney/khatta.
Come summers and every Indian household is waiting for mangoes. Mangoes is an emotion in the country - every form of mango can do wonders to the tastebuds.
What an amazing fruit - worth the wait for the entire year, isn't it?!π
Mangoes have a lot of health benefits too from helping in digestion, lowering cholesterol , clear skin and many others.
RECIPE WITH STEP BY STEP PICTURES:
Peel, cut and dice the raw mangoes - set them aside.
Let's prepare the masala - will need the below ingredients. Dry roast the ingredients: methi seeds, ajwain seeds, saunf, lal sukhi mirch, jeera seeds for about 3-4 minutes - there will be a nice smell from the bhuna hua jeera that will fill the room - don't overdo it, else the chances of the spices burning off is high.
In a mortal and pestle - grind the spices coarsely.
Now add the diced mangoes. To it add 1 teaspoon of turmeric powder and about 1/2 teaspoon of red chili powder. The salt is per taste.
They need to be cooked till the mangoes are tender.
Once the sugar/jaggery mixes well - you will notice from the heat, the sugar/jaggery starts forming syrup.
I added about 2-3 cups of water(as per consistency required) and the dry roasted spices to the mixture and gave it all a good stir. Allow it to simmer for about 3-4 minutes and leave it at a consistency desired.
Please note that the khatta tends to settle more once left to stay(due to the sugar/jaggery) - so keep the consistency slightly runnier than what you desire for .
And it is ready to be served - delicious!! π
INGREDIENTS:
- 1 teaspoon of jeera seeds
- 1 teaspoon of ajwain seeds
- 1 teaspoon of saunf seeds
- 1/2 teaspoon of methi seeds
- Sukhi mirchi - 2/3
- 1 Raw mango - diced
- Sugar/Jaggery - as per taste
- Red chili powder - 1/2 teaspoon
- Turmeric Powder - 1 teaspoon
- Salt as per taste
- Curry leaves
- 1 to 1.5 teaspoon of panchfodan
