Culinary Experiments : Rajasthani Pyaaz Kadhi - Plain

PLAIN RAJASTHANI KADHI

Said to have originated from Rajasthan, kadhi is semi thick gravy of gram flour, spices & besan. The below recipe is for plain kadhi with no fritters added, but just plain old sliced onions. The dish is quite common in the northern parts of the country and can be made in multiple variations.

RECIPE WITH STEP BY STEP PICTURES:

In a bowl, add 300 - 400g of curd. 
Add 1 tsp red chili powder, 2 tsp turmeric powder, 1 tsp kashmiri lal mirch powder, 2 tablespoon of besan & 1 tsp salt. If you want thinner consistency, reduce the besan quantity. Mix it well, ensure no lumps are formed. Now add water to dilute it as required - 1-2 glasses of water preferable.
In a pan, add 2 tablespoon of ghee. Once it hot, add few bayleaves, few black pepper corns, 2 cardamoms, 5-6 cloves, 2 cinnamon sticks, 1/3 tsp methi seeds. Let the oil be infused with the garam masala flavours. Sautee.
Time for 1 tsp each of mustard seeds, cumin seeds.
Once they crackle and splutter, add 1/2 tsp asafoetida, 1 tsp chopped garlic, chopped ginger each, few curry leaves and 2-3 sukhi mirchi. Fry them well.
Now add sliced onions, sautee them till they are slightly golden brown. Add chopped coriander leaves and mint leaves - sautee.
There will be a beautiful aroma of all the spices, now add the besan concoction - give it all a good mix, again ensure no lumps. Dilute as needed. Let it simmer for about 5-6 minutes, and you notice the consistency will start to thicken. 
Add salt per taste.
Turn off the gas, when you have achieved the desired consistency.
The final touch is the tadka of ghee, kashmiri lal mirch, sukhi mirch, 1 tsp jeera seeds, kasturi methi and chopped coriander leaves.

  • Bayleaves
  • An inch of ginger
  • 1 tsp chopped garlic
  • 1 tsp mustard seeds
  • 1 tsp jeera seeds
  • Few black peppercorns
  • Cloves - 5
  • 1/3 tsp methi seeds
  • Cardamom - 2
  • Cinnamon - 1/2 inch
  • Few curry leaves
  • chopped chilies
  • 1/2 tsp asafoetida
  • Few mint leaves
  • Sliced onions
