Culinary Experiments : Amritsari Chole - No Onion

AMRITSARI CHOLE WITH NO ONION

Love for Punjabi cuisine has a different fan base in the country. And this Amritsari Chole tossed in spices,  is a preparation that goes well with bread/rice. Tried this no onion recipe - for days or festivals when we don't consume onion or garlic. 


RECIPE WITH STEP BY STEP PICTURES:

Soak the 2 cups of chole overnight. If you have less time, use boiling hot water to soak the chole, the chole can be used for preparation in about 4 or 5 hours. 
Pressure cook the chole with 2 black tea leaf bags, few black pepper corn & long, a bayleaf, 2 black cardamoms.
In a pan, start to prepare the masala - add 2 tablespoon of oil. Once the oil is hot, add 1 tsp jeera seeds, ginger juliennes, sliced chilies and pinch of hing. Fry it for about a minute.
Now add 2 roughly chopped tomatoes.
Then add 2 tsp of the chana masala, 1 tsp of sauf powder, 1/2 tsp of black salt, 1/2 tsp of kasturi methi , 1/2 tsp of red chili powder, 1 tsp of amchur powder, 1/2 tsp of black salt and salt per taste. The ratio can be adjusted per your taste & quantity. Fry the masalas well, till the oil starts separating.
If you don't have saunf powder, dry roast 1 tsp sauf and coarsely grind in a mortal pestle.
Once the oil starts to separate, add the chopped coriander leaves. This adds freshness to the dish.
Time for adding the boiled chole - mix all the masala well. 
Fry for about 3-4 minutes - let the masala sink in.
Add water as required, allow it to simmer for another 5-6 minutes. Mash some chole, it brings about thickness to the gravy.
In the end, atop add a tadka of ghee,1 tsp ajwain seeds, ginger juliennes and chilies. Garnish with coriander leaves.

  • 2 cups chole

  • Sliced chilies
  • 2 tsp jeera seeds
  • Pinch of hing
  • 2 Tomatoes
  • 1 tsp saunf powder
  • 1/2 tsp of black salt
  • 2 tsp of chana masala
  • 1/2 tsp of red chili powder
  • 1/2 tsp kasturi methi
  • 1 tsp amchur powder
  • 1/2 tsp black salt
  • Salt per taste
  • Water
  • 1 tsp ajwain seeds
  • Coriander leaves
  • Oil
  • Ghee
