Scullery Experiments : Suji Pancake

Quick recipes, which need less preparation and cooking time is always what I prefer. Thanks to my mommy, she is adept at such quick stomach filling hacks.

This one is a suji pancake - also can be called Semolina Pancake.



Ingredients for single serving:
  1. Semolina - about 4 cups
  2. Curd - 1 cup
  3. 1 Finely chopped onion
  4. 2 Finely chopped chilies
  5. Finely chopped coriander leaves
Procedure:
  • Place the pan on the stove,add about 2 tea spoon olive oil and allow it to be heated.
  • In a bowl take the sieved semolina and add about 1 cup of curd to it. Mix it consistently, so as to avoid formation of any lumps. Watch out for the consistency of the batter, it must be neither too thick nor runny, just apt for rolling on the pan comfortably with ease. 
  • Add the finely chopped onions, chilies, coriander leaves and salt as per taste. Mix the ingredients well.
  • The pan must have gotten sufficiently heated up by now.
  • In about next 30 secs - pour a ladle full of batter on the pan. Now try to spread the batter evenly on the pan and to give it a circular shape. 
  • Pour a teaspoon of oil all around the batter, which will help fry the sides aptly.
  • Now cover the pan.
  • In about 5 minutes or so, uncover the lid. If you notice the sides getting a slight brownish color - and the pancake on sticking to the pan, it is time to flip the sides. This would allow the other half to be cooked.
And in about 15 minutes or so, you are ready with a easy to make , scrumptious pancake.

It can be had for breakfast or snacks with a dash of tomato-chili sauce.
