Culinary Experiments : Paratha Series , The healthy Bites - Palak Paratha with Onion Masala Stuffing Recipe

PALAK PARATHA

Come winter, and there is a surge in the hair fall. As a aftermath of it is when I attempt to include more leafy vegetables in my diet - to be very specific eat oodles of Palak every week. πŸ˜›

I try to prepare a variety of dishes - which would have the palak ingrained.

Goes without saying, my little patience always leads me to go for simple and quick to make dishes.😎
INGREDIENTS:
  • 1/2 Palak bundle rinsed and chopped
  • 1 Onion finely chopped
  • 1 Chili finely chopped 
  • Asafoetida
  • 1/2 piece ginger
  • Red chili powder
  • Amchur powder
  • Coriander powder
  • Salt
  • Ajwain seeds
  • Oil
  • Wheat flour

RECIPE:

In a blender, add the the chopped spinach leaves, the ginger chunk and a pinch of salt. 

Churn the ingredients to prepare a thick fine paste. You could choose to blanch the spinach leaves and then puree the leaves - but that's some work you ought to do there. 😁

To prepare the dough - 

In a bowl, take about 3 cups of wheat flour - to it add

1. Salt as per taste
2. Ajwain seeds
3. 1/2 tea spoon red chili powder
4. 2-3 table spoon oil - depending how your dough is coming out to be 
5. A pinch of asafoetida
6. 1/3 teaspoon of dhania powder

Mix all the ingredients evenly and kneed a soft dough. Set this aside for 15 minutes.
To prepare the filing -
In a bowl, add -

1. finely chopped onions
2. finely chopped chili
3. 1/2 tea spoon of amchur powder 
4. Salt as per taste
5. 1/2 teaspoon chili powder

Mix this well.

After the dough has rested for sufficient time - pull out small dough balls from the kneaded dough. And stuff them properly with the onion filling.
Now roll them beautifully and patiently to parathas.
Place the rolled parathas into a preheated tawa.
Serve it with a bowl of raita or achaar.
