Scullery experiments : Odia delicacy - Pitha

Pitha is a famous Odissa delicacy which is a fondly prepared in all Odia households - to gist it, it is more like a steamed cake.

Preparing pithas is an art and I am far from having aced the art.

I used readymade batter from the market to make the Pitha.

My mom usually prepares the batter at home, by soaking a mixture of dal and rice overnight. Then after thorough cleansing, it goes down the blender with right amount of water and the batter is ready.

Pitha are mostly prepared plain, the one I tried was with slight sugar addition. You can add grated jaggery too - it would taste lovely.

Pitha must be cooked in a typical hollow kadhai - to bring the best results.
  • Heat the kadhai and add oil.
  • Once the oil is hot enough,pour the batter into the kadhai - tactfully place a thick layer on the kadhai. Now top it with sugar or jaggery and coconut crumbles.
  • Over the top layer, now place another thin layer of the batter, covering the added toppings.


  • Cover the lid, and allow it to cook for about 5-7 minutes.
  • After about 5-7 minutes, check on the pitha - if it is crispy enough at the sides - and the bottom is reddish brown in color - it is time to flip the sides and cover the lid back again.
  • Allow it to cook for another 5-7 minutes, till the both the sides attain the similar color.
