Scullery experiments : Scrambled Eggs
Eggs are definitely my first love. The first thing that I learnt to cook was an omelette. π
I always attempt the easiest of the recipes - I cook to survive! ππ
Scrambled eggs as they say - tried to make an omelette - but when I tried to flip the omelette,I had scrambled eggs.π lol!!
But that's not the case with this recipe, I am attempting for a full fledged scrambled eggs delicacy.
Anda bhurji is a commonly relished dish in the Indian households. Ahaaa.....

You would need:
- 2 Eggs
- 1 Finely chopped onion
- 1/2 Finely chopped firm tomato - you can remove the pulp of the tomato
- 1 Finely chopped chili
- 1 Finely chopped bell pepper - you could use red/yellow/green ones
- Few finely chopped coriander leaves
- Italian seasoning
- Chili Flakes
Procedure
- Start with placing a non stick pan on the stove.
- Add about 2 tea spoon of olive oil. Allow it to be heated.
- Once the oil is hot, add the chopped onions and chopped chilies. Let the onions fry till they turn slightly brown.
- Next add the chopped bell peppers. I always cook them such that they still have the slight crunchiness retained.
- You can add the chopped tomatoes now.
- Saute this for sometime.
- Once the veggies are fried enough - pour the whisked egg mixture over it. Whisking the egg mixture is optional - you could break the eggs and empty the contents in the pan directly. π
- Add salt as per taste.
- Allow the mixture to sit for about 30-40 seconds on the pan on the bed of veggies.
- And, now it is time to attack and use your spatula to its best to scramble the mixture. Just break through.
- Fry the mixture - till the eggs chunks are fried enough and the creaminess is lost.
- Mix all the contents equally well.
- Garnish with Italian seasoning, chili flakes and the chopped coriander leaves.
And tadaa...., that's your very desi anda bhurji aka scrambled eggs:
